My mom sent me this recipe recently. She thought it would be a nice, simple recipe that I could make just by throwing a bunch of ingredients into a crockpot in the morning. I love recipes like that. There’s nothing better than getting home at the end of a long day and smelling the delicious food that has been cooking in the crockpot for hours. I will say: my mom recommends seasoning your chicken breasts prior to adding them to the crockpot. Apparently the people who introduced her to this recipe didn’t do that and the resulting chili was good, but a little bland. So keep that in mind when making this recipe, I guess.
Crockpot White Chicken Chili

Season chicken breasts as desired and place at the bottom of the crockpot.

Pour in all of the cans of beans, rotel, and corn.

Top with seasonings and ranch mix. Stir.

Cook on low for 6-8 hours.

Shred the chicken. Stir. Add cream cheese and stir until combined. Season more as desired. Serve.
