I had three tests this week, three days in a row. It was not a fun experience. This past weekend, I should have been studying for them so that I wasn't so nervous. Did I do that? No, I did not. Instead, I had a craving for chocolate chip cookies, so I made these! They were excellent and the leftover cookies didn't even last three days. Was it worth it for a potentially lower grade on the test? Perhaps. Time will tell. Why don't you make these yourself and then you can tell me if it is worth it?
Brown the butter in a saucepan, stirring constantly over medium heat until the butter turns a deep honey color. Remove butter from heat and place in the mixing bowl. Cool the butter in the freezer or fridge until it reaches a room-temperature consistency. ***Be careful with this step! You want the butter to brown, but not burn!
Preheat oven to 350 degrees if using nonstick cookie pans. If using regular metal pans, preheat the oven to 375 and place parchment paper on the bottom of the pan.
When the butter reaches the right consistency, cream the butter and sugars together. Add in eggs and vanilla and mix until the mixture turns pale and fluffy.
Add in flour in small amounts, mixing each time. Add baking soda and salt. Fold in chocolate chips.
Shape dough into balls and place on the baking sheet. Bake for 10 minutes until golden. Cool and enjoy!
