This recipe was adapted from an omelet rice recipe I found years ago. I've never gotten around to perfecting the omelet, but the rice by itself is pretty good! My siblings always want me to make this rice for them whenever we have leftover Chinese Takeout rice. It's quick, easy, and best of all, it tastes good!
Fry onions in oil until fragrant. Add carrots. Cook until soft
Add Spam. Cook until Spam is warm all the way through.
Add rice. Make sure you crumble it so that it doesn't stick together. Cook until rice is warm.
Add the soy sauce and the ketchup. If rice is still bland, add more of either sauce. This part is really up to personal preference (I like mine more ketchup-y than soy sauce-y, but sometimes my siblings prefer the rice to be more soy-forward than ketchup-forward).
Serve with a fried egg. Enjoy.
