My meal this week is a Mary Me Chicken pasta! I have to run and grab some parmesan to make it today, so hopefully I have time to do that this afternoon. I haven’t ever made this one before, so I am excited to see how it turns out! Below, you can find my version of the recipe with any alterations that I’ve made. Edit: I loved this recipe! It may not look like much, but it packs some serious flavor that I am a huge fan of. One thing I will caution you about: this recipe makes enough for 4-5 people, so if you’re making it for yourself you will have plenty of leftovers. It reheats well, though (or about as well as a microwave can do).

Marry Me Chicken Pasta

Cook and drain the pasta, reserving one cup of pasta water for the chicken broth.

Cut the chicken into bite-sized pieces and season with salt and pepper.

Heat the sundried tomato oil in a skillet over medium-high heat. Add the garlic and onion and cook until fragrant. Add the chicken and cook until the chicken is no longer pink and is cooked through.

Remove the chicken and set aside.

Add the butter to the skillet. Once melted, add the flour and stir to make a paste.

Whisk in the chicken broth, reserved pasta water, half and half, and parmesan cheese.

Stir in sun-dried tomatoes, paprika, and Italian seasoning. Season with more salt and pepper if wanted.

Simmer until the sauce begins to thicken.

Add chicken and pasta back into the skillet. Stir until combined.

Garnish with basil if desired.
